A Meat Loaf Kind of Day


Last night as I was watching television, I kept running through recipes in my head that I could make. A few weeks ago I had decided that life would be easier if I would just cook a nice meal on the weekend that I could reheat throughout the week. Last week I did a pork roast, which was great but the gravy was lumpy. I did figure out that if I used my immersion blender that it would fix all the lumpiness, so I fixed that the next day.

I tossed about eggplant parm (yummy) and an angel hair pasta with tomato and garlic but ultimately picked meat loaf. I was not a fan of this dish until a few short years ago. Martha Stewart had it an issue of Everyday Food and it sounded good, so I made it. Since then, I will make it from time to time. I love the fact that it as marinara sauce as opposed to ketchup. Maybe that was my issue before? Who knows. I did forget to add a bit of sugar to the sauce to take the acidity out but it should be okay.

I have some leftover mashed potatoes but more than likely I will make some more tomorrow, along with some broccoli. Since I had such a late lunch I doubt I will have any of it tonight but it is one of those dishes that tastes even better the next day.

I am thinking of either whipping up eggplant parm next weekend (it has been too long since I have had this wonderful dish) as well as possibly digging around for a recipe for pasta bolganase. I haven’t had that since last spring and that was really good.

I am hoping for a very productive week at work. I think I am going to put my phone on forward, block off my cubicle and just sit back there banging away on the computer. I have several reports, presentations, follow-up messes and at least four meetings that I need to deal with so I don’t really need to be away from my desk. The best part? My boss will be out of the office the first part of the week which means that I can easily get a lot of things accomplished. He already knows from a conversation this weekend that I will more than likely keep my phone on forward. While I really hate to do that, I seem to get interrupted more often than not and my desk is paying for it.

Now the timer is going off! So I am off to check on my meat loaf. Hope it smells really yummy!!!! Maybe a small test will be okay for the evening!

Plus, I will always find the hardest path to follow and take that one, why would anyone want to take the easy way?!
