Besides the heat, which is just oppressive right now, I have a cold or a sinus infection. Who knows but I can tell you that adding that in with the heat has made for a very miserable weekend so far.
After catching up with Sonia midweek and watching her cute little one waking up via a video, I was reminded of something I have neglected for at least a couple of years. The joke has always been my cooking equals having friends. Summer was always greeted with ribs and all the fixings but between moving here and a few other things, the ribs have not seen the light of day.
I love making them and the excitement from all of my friends when I start calling to setup our kickoff meal. But groceries can get pricey and when you add together the whole group, it can easily max out the grocery budget.
Sonia mentioned the next time I am up, we are to get everyone together and I am to offer up the ribs. I am cool with that because that means everyone comes to me and I can visit them all in one go. Plus, not living there means I don’t have a whole crew to cook for and I miss that as well.
As I was winding down work yesterday I had a light bulb go off (which is a miracle since I was sick, it was the end of the week and Friday afternoons are really tough). What if I made pulled pork BBQ instead of ribs? Less time involved but I still get to make my secret rub and sauce!
In between some major sleeping today I pulled out the prepared pork (rubbed it last night, wrapped it up and let it sleep on it) and threw it in the oven. This evening I pulled it out and tested to see if it was tender enough to fall apart. Yes indeedy, it was. Now all I have to do is make the sauce and I am good to go.

Now I am going back to bed and hoping that I feel decent enough to go to the pool tomorrow. If not, I guess my day will be consumed with napping. I hate summer sickness! That is not the way I anticipated my start to the summer.
